I asked if they could disconnect the ABS system and they said no that they might be liable if something were to go wrong.
The question is; Now what do I do? What would you do?

The ABS light being on , only indicates that the ABS system no longer functions, you need to make sure your service brakes are working, first and foremost. If the rotors are black or a dark blue, you need brake work done. The pads may be cooked and ready to fall apart.
JMHO. If they didn't explain this to you , take it to another shop, tell them your not worried about ABS operation , you just want an estimate on the service brakes, get the service brakes working 100%. then pull the fuses on the ABS yourself.
The ABS system is stacked on top of the service brakes, in order to stop your vehicle quicker in certain situations , icy roads, panic stops, it will cycle the brakes on and off to allow you to retain control ; steering ; instead of skidding.
Millions of vehicles still on the road without ABS systems, yes they are important in certain situations, and the shop can't disconnect them for you. But are they important for the safe operation of your unit.
JMHO. If your regular brakes are good , NO.
