Can I use an old Rv converter as a stand alone inverter?
I got this used converter and I’m wondering if I can wire it to the batteries and make 110v and have an extra socket or two?
I’ve searched around a bit but most is about the differences of inverter and converter which I understand. But I don’t understand if I can wire up just some parts of this and get 110v out of a 12v set up.

Nope.
A converter is a battery charger. If it doesn't ALSO have a built in inverter, you can't just turn it around. BUT, if it is a dual device, you know, shows that it's a converter/inverter on the labeling and has a couple 120 Vac outlets in the case, sure you can.
If it's just a converter, you'll need to buy a separate inverter.

As Jim implied, and as I understand it, in most cases, converters convert 110V AC (generator/shore power) to 12V DC (batteries, DC fridges, lights, other stuff that needs DC power).
In most cases, inverters do the opposite 12V DC (from your batteries) to 110V AC (microwave ovens, household type appliances).

CONverter
AC Voltage Input gets 'converted' to DC Voltage Output via retrification
INverter
DC Voltage Input gets 'inverted' to AC Voltage Output via transformer and rapid magnetic on/off switching
Both devices use AC and DC BUT each one is totally different in design/components

Like above. But if charger/ convertor you could make into a battery charger. If it's say 40amp if multi stage charging all the better,. Please make safely on 120v side.

Either unit may have a battery charger "module" to enable charging batteries. You cannot simply use a converter to charge a battery, you must use the charger module.

Many people confuse "inverter" and "converter". Make and model can clear up the communications.
