Departure date(s) ?

Looks like will be on the Gulf in April of 2015 for a family gathering. We are bringing our MH since the house (huge!) they have rented has no elevator and MsC cannot walk.
Our plans for the two of us was for a late May trip to the west for an un determined length. This is likely the last trip we will be able to make since MsC's health is failing pretty rapidly now. Rather than drive back to N Georgia for a couple or three weeks, we are discussing heading west from Panama City area.
What would you guys think of hanging along the coast, just drifting around before we head back up to S Dakota somewhere around the middle of May? Maybe get into Montana plains around the first part of June.
Don't want to get into tornado weather in the Midwest, but also don't want to get into snow and ice etc by arriving too early in the spring in the Rockies and Great Basin Area.
Everything is still in the planning stages right now except the family thing near Panama.
Routes suggestions, things to kill time doing on the coast, and things to see along the route(s) greatly appreciated. Our previous trips west have always been through I-70 and I-80 corridors (except for an I-10 trip many years ago and prior to Katrina disaster) Thanks in advance guys!
