Gray open, black closed. My black tank is good for about 10 days, while the gray tank last maybe two days between showers and dish-washing when not in water-conservation mode. I dump my black tank once a week, and shut the gray tank's valve the day before. I've never had an issue with sewer gas - there are P-traps in the camper for that, and the gray and black tanks are vented through the roof.
My gray and black tanks are the same size, and not as large as those on bigger campers.

They are the one's heading for a problem, not you.
FWIW I think I finally found out why some people leave the gray open. Washing machines. For us the gray and black fill up more or less equally so we leave both closed. I can see where a washer or maybe dishwasher would upset that balance.

BINGO!
Black closed, gray open for those very reasons. Never had a problem with odors either. Don't use any chemicals.

We never leave the black tank open. We dump and rinse several times when almost full.
We always leave the gray tanks open. We have a dish washer and clothes washer.
We have never had a pyramid in the black or gas come back in the gray.
When we travel we have 1/4 to 1/3 full in black and gray to help clean them.

You might think about adding some liquid laundry detergent to that 2 gallons of fresh water when you travel.

After dumping, DW always adds tank deodorizer. And we never use the shower and only CG water for dish washing. Thus, the gray tank has mucho Dawn floating thru the gray tank dump.

Black closed. Grey usually closed. I like to leave it closed so I can use the grey tank contents to wash out the sewer hose after I dump the black tank. We have relatively small tanks, so we are usually dumping daily. Never less than every other day.

Nope, never, nada, no-no, nah-nah, nine.....
I don't have to justify why or what for, people can do whatever they want but I do what has worked for me well over 14+ years of Full-time RVing and will continue to do it that way until my last RVing day.
