First time doing Thanksgiving in the coach

It's just my husband and I, and the dog and cat.
All the kids, grands, and other family have Thanksgiving plans, so we decided this year that we'll go camping and do us a little 2 person Thanksgiving in the coach.

Our menu will be the T-day basics:
Turkey Breast
Cornbread Stuffing
Green Bean and Corn Casserole
Mashed Potatoes and Gravy
Rolls
Pumpkin Pie with cool whip

I'm trying to figure out how to get everything cooked and still hot all at the same time!!

I figure the turkey breast can cook in the convection oven and then be tinfoil wrapped for the 30 mins the Green Been and Corn Casserole will take in the oven. I did suggest to my husband that he consider doing the turkey breast on the grill but he wants it baked.

Mashed Potatoes, Gravy, and Stuffing (yeah, for ease, we're doing stove top) will take all 3 induction burners we have, then the rolls can go on for a quick few mins after the casserole is out of the oven.

Hopefully with lids and tin foil we can keep it all warm till everything is ready.

The Pumpkin Pie and cool whip is our favorite at Thanksgiving every year so we decided we'd go with that and skip all the other fancy Thanksgiving desserts.

What are your tips and tricks for doing Thanksgiving in your RV??

I'm not much of a cooker so I'd probably just go park in the lot at Cracker Barrel and let them take care of things.

We go camping every year with family's for Thanksgiving, always a great time, some years have been colder than others.

We typically cook our Turkey in an electric smoker, its stupid easy to do it this way, set temp, set time, 4 hours later its done.

We put a rack in the convection oven - room for 2 large dishes or more smaller ones ...

It’s very simple we go to myrtle Beach every thanksgiving. Just jump in car and go down to the K&W for there thanksgiving dinner.

Same with us.....we throw the rack in convection oven and cook two items at once.

We spent some Thanksgiving meals with approx. 50 friends boondocking in the desert. The bird was cooked over the firepit on an upright skewer with a trash can over it. (New, of course). Delicious and moist. The tables of sides were overflowing.

I have spent thanksgiving boondocking on a private ranch in the RV for 25 years. The only thing I can say that I haven't seen is, I soak my turkey in a sugar and salt brine with ice in the cooler for 2 days, then I cook it on my BBQ/smoker JUICIEST turkey ever.

Cook the turkey upside down! Its amazing how cooking it this way will make the turkey super juicy

Some grocery store deli's prepare complete Thanksgiving dinners. We did that one year when there were medical issues in the family. Let them do the work.
