I always used the roll plastic underlayment that the manufacturer recommended - not out of any special knowledge, but just because they said so.

And I should note - use silicone caulk around the edges not just as a soft spacer, but to keep spilled liquids from getting under the flooring at the edges. The click-edges won't leak, but you don't want someone spilling a glass of milk right there at the wall edge and having it wick under the planking. (Don't ask me how I know this. Yuck.)
