Why not just leave and use the generator in the back of the truck? Once you get it loaded, just secure it and leave it there with a power cord to the RV. Two generators are OK, but you now have 2 machines to fuel, maintain, and store.

I'm with Grindstone, get a generator with remote start and leave it in the truck. Put a tri-fold cover on and it stays dry and away from prying eyes. Lock it to your tie-downs, makes life easy. Champion 3500 has remote start I believe.

That's what we do and it works great. I have mine locked down but also have a tonneau cover so it stays covered most of the time. I also think that running it in the bed reduces some noise as the sides of the bed focuses it upward instead of outward.

Almost said something when I saw mention of a $50 wench, but thought better of it.

I was thinking something like ScoobyDoo's idea with a ramp.
Get it partway up the ramp, and lift from the bottom of the ramp.

I'll make a couple of suggestions. If you buy the two smaller generators, you can use them individually or together. You won't always need the power of both unless you're trying to run A/C. If you have a break down, you will have a second one as a spare. Less fuel consumption when only one is needed.
If you have the large one, you'll be more inclined to leave it in the bed of the truck because it's too much work to remove. Even if you set up some type of crane or lift, you still need to get it close to the trailer to secure it while gone in the truck.
Lastly, whatever you decide, try to avoid running a generator in the bed of a truck. You're basically taking the noise of the generator and amplifying it.

I use something similar to this to load and unload a Trailer Saver TS3 in my truck. Got mine from Tractor Supply but haven't seen them there for awhile.

Check the specs on the Boliy PRO3600SI inverter series generator. You will see it out-performs the same sized Honda, Yamaha, and other major brands in almost every catagory, while weighing 78# full of oil and fuel.
I bought one in 2008, had to replace the carb once due to operator error. I forgot to drain the carb when we spent a winter in Florida. Today's poor quality gas ruined the carb, the upside_ a new carb was only $37.
Now I drain the carb via drain screw on bottom of float bowl.

I use my engine hoist like show above go get my cart mounted old school Onan in my truck. It takes 3 people to load it by hand.
For RV use I have 2-2K Yamahas.
