Think about this a minute: 2 group 31 batteries will, in my experience, start a 855 cubic inch Cummins diesel semi truck engine in mild weather. For the very cold Michigan winters we used 4 group 31 batteries. These were Diehard flooded lead acid batteries from 30 years ago when I worked as a heavy truck mechanic for a food warehouse company.
I think you can do just fine with 2 group 31 batteries, use 3 or more if you want. Flooded or agm from Sam's Club or elsewhere should work fine. I use 3 flooded group 31s for my coach batteries and have no issues when boondocking with 500 watts of solar for extended periods.
