Why hook up to water in sites with no sewer?
More often than not I see people hook up to water in electric/water-only sites. On most RVs, you'll fill your gray water tank before you run out of water in your fresh water tank, so I don't see the advantage. And on mine, the fresh water gauge is more accurate than either gray or black, so I use that to gauge how much water I'm using and therefore how much is in the tanks.
Maybe water pressure? But if there's no sewer at the site, presumably people are being careful about water usage, and more water pressure is the enemy in those cases.
Maybe they never ever ever use water from their fresh water tank, and it's become an algae-filled science experiment? But they don't use it even when traveling or stopped?
Seems to me if you do use your fresh water tank even occasionally, it's better to keep water flowing through regularly. And hoses no doubt last longer if they're not left exposed to the elements.

I understand what you're saying, my reasons are better fuel economy getting to the spot when traveling from home, my house is in a development, different from where stored and hard to fill with location of spigot, we pay for that water at park lol, and we don't boondock yet, so easier to keep sanitary... and better gas mileage (again) as 9 mpg is bad enough

Better ride
With my previous coach, with a full water tank, it rode better. The mpg isn't worth not having a better ride.

Using CG water is better than listening to the pump run, some are really noisy. Many don't carry onboard water except for enough to handle potty breaks or hand washing requirements while traveling. Some don't want the extra weight of hauling 50-80+ gallons of water.
We tend to take a healthy amount of water with us as we've run into situations where the cg water is gross, temporarily not available, or for some other reason have to depend on our onboard water system.

Maybe they have sewer totes and dump the gray water every few days. Besides, who cares what the other guy does, as long as its not effecting you.

Everyone has their own ways, no right or wrong that I can see. We almost always utilize the campground's pressure. Pressure is consistent, not noisy (pump is under our bed), and as someone else mentioned, no wear and tear on the pump and its pressure switch.
The tank level indicators on our rig are accurate but I rarely look at them. We've camped enough over the years that it's easy to know what's going on in the tanks. Almost always the same with us getting 3 full days with the gray and 7 with the black.

I usually don’t carry water on board if I’m staying at a campground with a water hookup unless the drive is long enough that we might need to use the bathroom along the way. I installed a new pump a few years ago specifically so we could use the bathroom during our 8-hour drive to the beach.

I don't mind the sound of my pump during the day, but, would prefer not to hear it if I get up during the night.

I used the camp water to save wear & tear on my pump, plus I use the camp water to refill my water tank to 30% of being full, plus I also used the camp water to put 5 gallons of water in each of my gray & black tanks, which I add my cleaning solution to before we start to drive down the road, so when we get to a campsite with sewer I can dump all the bad stuff out, as soon as we get there.

We use water from our tank exclusively also. Must be our boating habits staying with us.
Nothing wrong with hearing the pump. If it cycles without a tap on you have a leaking problem. On city water you will never know that you have a leak until it shows on the ground.
Wearing the pump out using it. Utter nonsense. Over 18 years and more than 2500 nights drawing from the tank and we only recently put in a new pump. Gasket of the old one was leaking.
Using water from the tank you know that you have limits and are more inclined to conserve rather than waste water. We have 100gal FW capacity. Enough for at least seven days. If needed, fill right up upon entering the CG. Dump on the way out.

We have a TT and the last time over the CAT scale with a full fresh water tank, up front ahead of the axles, I had 16.5% of the trailer weight on the tongue. Way to much, so now I run with only a few gallons for potty breaks along the way and drop a couple hundred pounds off the tongue weight. Most VA state parks do not have sewer, so we only plan 3 or 4 day stays when we don't have sewer. The dump station is usually convenient on the way out of the CG so I only worry about how full the gray and black tanks are getting. Dump on the way out.
