New Rv'er from South Florida

Just bought my first RV. A 2017 Thor Quantum WS31 (Class C) (I'll post pics in New Rig Showoff). Picked it up April 15th, but the only place I've gone is back and forth to the RV dealer in Port St. Lucie 3 times (LaMesa RV). Have had some issues that still haven't been resolved. This is the only place I can go to for Warranty. It's 112 miles each way.
I'm getting so discouraged! I want to get on the road, but I'm still not ready. In the 3 times I took it out, I damaged it twice. First by trying to fit into the driveway next to my car. Side swiped by car's rear bumper and put a scratch on the side of RV. Second time, I backed into the fire hydrant, denting my bumper. Didn't even check back up cameras! Not used to driving something so big (32 feet).
First, the ice maker wasn't working. They fixed that.
Second, I got Low Voltage error when trying to Auto-Level (LCI). It only worked if both the engine AND generator were running. I think it's fixed.
Third, installed a 30 AMP outlet on the side of my house, so I could run the A/C. Spent 3 nights sleeping with the 3 cats, so they could get used to the RV. Realized the A/C doesn't cool the bedroom below 80, unless I close ALL the vents in the rest of the RV. Placed thermometers in both rooms. There is a 6-9 degree difference in rooms. Also, while traveling, I'm cool from engine A/C, but the back got up to 96 degrees during a 2 hour drive. That would roast the cats! So, am I stuck driving with the generator running, to keep the A/C going in the back. Was told, "Operating as designed"
Forth, while driving to LaMesa RV (2 hr drive), put the inverter on, to keep the Residential Refrigerator going (electric only). After the 2 hr drive, voltage was 11.8 and refrigerator went off. The Alternator was not charging the house batteries. I have been back for this twice, still not working!
Fifth! During this last round trip, I calculated my mpg. Only 6.5!! and I'm not even towing anything! Realized I haven't checked the air pressure of the tires. When I tried, realized I couldn't check the rear inner tires, as the valves weren't visible, so tomorrow will try to figure out the extensions I need. Also bought the Tire Minder TPMS.
Sixth! Haven't decided what to do about a Toad. Currently I have a 2007 Honda Accord with only 82K miles. It's reliable, no problems! The only way I can take this car is with a Tow dolly (quoted $1700 at LaMesa). I think it would be dangerous to drive up the dolly with no one to spot me. Plus, I already don't have room to park my car. The RV takes the entire driveway. After spending 80K for this RV, I can't afford to spend a lot for a decent car to tow 4 wheels down. I would have liked a Jeep Wrangler, but they don't seem to loose value. One's with over 200K miles were still being listed for over $10K. So, I'm still looking.......
Been trying to plan my first excursion from S FL to the Northwest, then returning through the southwest. Probably 2 months and about 10K miles. Using the RVtripWizard to plan route, bought memberships in Good Sam and Passport America. Bought the Garmin RV LMT-S GPS for RV's. Almost stocked up with everything I need. Hope I can get on the road soon! It's too hot to be in FL now!
