We saw a Forest River Columbus 5th wheel when we were in San Antonio last weekend. Not only did it have bunk beds it also had a loft bed. Sleeping arrangements could be 6 without pulling out a couch and 8 if the couch is used. Quite a setup.

We had a 2007 Keystone Montana 3400RL. It was the days before 5'ers had leveling systems or we might still have it. Unless they are going to park it and not use it then a leveling system is not that important but if continued use the leveling system is a must. Finding a 5th wheel with two Bath Rooms's may take some time. i'm sure they are out there.
Also, don't trust the salesman, well at least with some of the BS they hand out. They will tell you that a 1/2 ton truck will tow it and it might just do that but then think about stopping. The 1/2 ton will be pushed by the 5'er even with good brakes. One never wants to lock the brakes up on the 5'er so they braking system has to be good. We towed ours with a 1 ton F350 King Ranch, Crew Cab, Long Bed and never regretted that decision.
Another option would be a Toy Hauler. The toy storage area substitutes as a bed room.
Don't buy new, buy used. Same principle as MH's, let the previous owner iron out the bugs.
The DRV (Mobile Suites) is an upscale 5'er but heavier than most. Models range in price to the 1.5K level.
Remember that whatever 5th wheel it is it has to be towed by something and that something has to accommodate the family. Also, when stopping for lunch in the 5'er, or potty time, it should all be accessible without having to put the slides out. The Columbus I mentioned had to have the slide put out about 1 to 1.5 feet to access the refrigerator and kitchen area. To access the dinette or living arrangement it has to be put out further. Lot's to consider. The Montana we had had access to the refer and kitchen without having to put any slide out but did not have access to dinning or living spaces without the slide going out somewhat.
