Another GREAT Memorial Day Rally!!!!

Sandy, As usual you did it again. A fantastic Mamorial Day Rally, Great Food, Friends and a Beautiful tribute to all Veterans, Thanks for a Wonderful Week-end. Looking forward to the next Campout. Made it home safe at about 2:00 p.m.

Thanks Sandy for another fine Texas Boomer rally. Of course seeing you driving that truck this morning gave all the men ideas and the ladies confidence. I pray all our Boomers made it home safely or wherever their next destination may have been.

We had an awesome time! Thanks so much to Sandy and Don Allen, too! I know that many people worked hard to make everything come together so well. We are looking forward to the National Rally in Arizona. Hope everyone made it home safe and sound!

Thanks to Sandy, Don and Amber for all their hard work. Sandy, you did a fantastic coordinating everything, especially the salad. A couple of my friends want the recipe. It was a great rally.

Sandy, Thanks for all your hard work in putting together such a terrific weekend. Thanks also to Don for the wonderful tribute to our veterans...it was awesome. Mike and Amber you guys always do so much to make everyone feel at home. Paul, thanks for the great pic's, you captured the essence of a great weekend. We had a great time.

Here you go...

MEXICAN HAYSTACKS
The best layered salad EVER



INGREDIENTS CALCULATED FOR 30 PEOPLE
Adjust the amounts for smaller or larger group





17 ½ cups of cooked rice (not instant rice)


3-5 large bags of Fritoes or Corn Chips


* 2 - 3 gallons of Chili *


* 3 lbs shredded lettuce *


15-18 tomatoes – diced


2 ½ lbs onion – diced


* 4# bag of Shredded Cheese *


2 large cans black sliced olives


2 large cans green sliced olives


* 2# bag chopped pecans *


1 -2 large bags shredded coconut


* 2 large containers Salsa *


The items listed aove with an * can be purchased in large
quantities at Wal-Mart or Sam's Clubs across the USA

SERVING SUGGESTIONS
When serving a large group, put all the ingredients
into individual bowls or containers.
The chili is best heated in a large roasting pot.

Line the containers on a long table in the order listed above
and everyone in the group can go down the line to
layer their own salad to their personal taste
starting with the rice and topping off with the salsa!


The FUN ingredients
Pecans and Coconut sound like they don't belong on a salad,
but the taste added to the other ingredients
just tops it off!
