as i understand you will plug a 50 amp surge protector into a 50 amp pedestal them plug a 50 amp to 30 amp adapter into the output side of the surge protector. then you 30 amp shore power cord into the 30 amp side of the adapter.
yes this would work. but it has a couple of gotchas.
is it a surge protector only or a full EMS that interrupts power if it senses and error condition? either will work. if it is a full EMS the interruption do to voltage outside of range will still work. these devices sense and react to voltage, not amperage. if it is only a surge protector it will still work as again they do not react to amperage.
the thing is that that the pedestal breaker will be a 50 amp breaker. your shore power cord is only a 30 amp cord. but the rv will have a 30 amp breaker as the main breaker in its distribution panel. many people use an adapter to plug a 30 amp rv into a 50 amp pedestal.
either way, yes it will work.
