We are van lifers. Retired young in our fifties and have been on the road for five years. We have plenty of money and our van is more luxurious and powerful than most RVs of any size on the road. The only thing we lack is space (and a washer/dryer). I can't count the times we've met men driving class A's or big class C's that check out our van and say I'd love to do what you're doing, but my wife would never go for it. We purposely chose a class B over larger rigs for the ease of going anywhere at the drop off a hat and the fact you just don't need 98% of the crap you have. It's not that we don't appreciate the big rigs, it's just not what we wanted itt of the RV lifestyle.

I live near and commute on hwy 50 in western CO, a popular route for us RV folks. See plenty of class B rigs. So far, it's been almost exclusively retirement age folks that I see driving these rigs. Not really the 'van life' people I see in the videos. Moab isn't far from me, and I've seen a few there too, but not that many. I assume it's because my small class A coach doesn't (can't) go where they go.
Yeah, I've watched the videos a few times, and it just doesn't look that appealing. Plus they seem to be more expensive per sq ft than a Prevost, and they don't seem that great once you get to a park with their lack of 'amenities', not to mention somewhat labor intensive to travel in. I assume most folks that own these are doing some type of dry camping. Really just a nicer version of a pickup truck camper. Not something I'd want to live in.

This isn't remotely close to true. I have a bathroom, hot/cold water, heat, AC, induction cooktop, convection microwave, fridge, king size bed, TV, custom cabinetry, etc. And, I have a 13.5kw lithium battery pack that can run all of these at the same time without breaking a sweat. It's far nicer than any class C I've ever been in and most class A's other than perhaps a prevost.

Converted ice cream truck, bread trucks, etc are not usually allowed in private RV parks, thus the boondocking.
To me van-life is class B van conversions. I've seen some very luxurious vans through the years. In the 1970's I had a 1T Chevy van conversion. Back then it was a day-van, no potty, no bed, 5G water tank and sink smaller than a soccer ball. I had to sleep on the floor after removing the table when traveling for the Army, but it saved motel costs.
I bought a porta-potty for the kids to use when traveling though.
It was primitive compared to today's van conversions.
But a bread truck, nope it's not a van.
