Has anyone tried painting the wallboard with polyurethane or varnish? My wife is wanting some protection for the wall behind the kitchen sink area. I thought about plexiglas or acrylic but it would be tricky cutting around the window. Any other ideas would be appreciated.

we used peel and stick tile, all around our sink, stove, and window. used the same product in the bathroom. purchased at Home Depot. Easy to use. Cuts with a scissors. Have is up four years and looks like we just did it!
There is also a plastic tile that looks like the tin ceiling tile you see in old buildings. It cuts easily and makes a pretty good backsplash with very little weight.
