There are many lists on the web IDing vehicles that may be flat-towed; however, I've seen 3 lnternet lists that were incorrect for at least one listing.
The final authority is the owners manual for each specific vehicle, it's under recreational towing.

We towed a 2020 Chevy Equinox and a 2024 Ford Maverick. Both very easy to hookup and tow.

It would help if you were a bit more specific about MY etc. or are you looking for any MY and anything but a Jeep?

We have a 2019 Buick Envision AWD. 2017-2020 are towable.
The easiest vehicle to set to tow that I've seen: Start vehicle, put trans in neutral and shut vehicle off. Then remove 2 fuses to prevent battery draining (or install a bypass switch).

No speed limits, no need to start at fuel stops or after overnight stops.

Here are some dinghy towing lists: https://www.roadmasterinc.com/media/dinghy-guides/

As others have pointed out, these lists are not always 100% accurate so once you've found a vehicle you're interested in, it's always best to check the owner's manual.

We're not Jeep fans, too small for me. We've been towing a variety of full and mid-size trucks over the years. The last midsize was a four door GM Canyon. Very comfortable and capable, with room for four adults.

Is you buick encore gx AWD?
When towing do you use 2w drive or AWD? Does it matter?

Just bought 2024 with AWD. Owner's manual gives lots of instructions but never discusses 2w drive or AWD.

Dealer seems to be clueless.

AWD, I tow in 2wd. I'm pretty sure if you put in awd and disconnect the battery it reverts to 2wd. It wasn't a hard installation of baseplate, lights and remote battery disconnect.

Good Sam used to publish a Dinghy Towing Guide. Attached is a sample one I downloaded. (More current versions are too big to attach to this thread.) 2020 is the last version I downloaded to my laptop. Data like this is out there to be found.

We have a 2020 Ford Escape Hybrid AWD that we've towed for the past 3.5 years with no issues. Very easy to connect for towing. The newer years of this model all seem to be equally capable.

Some of the small luxury SUV's are flat towable. Cadillac, Buick. Mostly GM cars although some Lincolns are flat towable. Great value used if you're looking for something a little more plush. Dunno that I would buy new, even if I had the cash on hand; it's a tough life back there. To be clear, I'd tow a Jeep all day if wifey would let me. BUt she won't, so I don't. Run a charging wire.

This is available on-line. (https://www.roadmasterinc.com/media/dinghy-guides/) Have a look for multiple model years.
