In every vehicle I know of for the past 20 some years, if that sensor is disconnected, removed or even electrically connected but is not in the exhaust system, your vehicle will throw a check-engine light. It may also do damage by compensating for something that is not real. Your fuel economy may also suffer.
I suppose it might work to install a bypass pipe with a port to accommodate the sensor, but even that could create trouble because the cat runs a lot hotter than a straight pipe.
I would not risk the potential problems of running a straight pipe.

Update; I had a Cat Clamp catalytic converter device installed on my Class C Tiffin Wayfarer. They also painted my CC red. It’s a little different instalatiin as my RV is a diesel. It costs about $400. Of course it’s not gonna stop a committed thief. But it will hopefully cause him/them to move on. It also allows me to tell the insurance company that I “tried” to protect from theft. And most importantly it makes me “feel” safer even if it may be a false sense of security.

They are stolen for the platinum, not for resale. They can get $2K per converter.

That's the oxygen sensor.
When you delete or hollow out a cat, you need to install a catalytic converter delete sensor to keep the check engine light off. There is a plethora of gadgets and tricks to fool the computer into thinking all is well when the cat isn't even there. Just google around and you'll see what I mean.
I used to gut perfectly good cats years ago just for the exhaust flow gains. Modern cats flow so well that you do not really need to do that anymore unless you have a clogged unit.
Look at this pic of my cat... see that wire on top? Same sensor, they all have them.

The upstream sensor is the one used by the computer to adjust the air/fuel ratio.
The downstream sensor is more of a 'monitor'. It looks at the exhaust gas chemistry, but more importantly, the computer looks for a time lag between its reading and the upstream sensor reading to back-handedly determine if the cat is working.
People who remove the cats have inserted an extension fitting to the rear sensor to slow down its response.

If you live in a state that does detailed annual inspections and/or emissions testing, you won't pass if you don't have a functional cat.

This is true. The inspector has to visually check for the presence of catalytic converters to do a proper inspection as well as the inspection computer will pick up a check engine light if it is on. If the computer has been cleared of codes before taking a vehicle in for inspection it will not pass unless the diagnostic monitors are reset.
In NY state you can have two monitors not reset if your vehicle is a 2000 or older model year and only one monitor not reset if the vehicle is 2001 or newer. This applies to vehicles under 18000# registered weight.
Above 18000# there is no emissions testing except the visual inspection but I'm sure there will be a change in the law soon. If someone does an inspection and passes a defective vehicle the fines are stiff for the repair shop and the licensed inspector. Our state has employees driving around getting vehicles inspected with defects just to catch shops doing incomplete or improper inspections.
I'm glad I sold my repair shop and retired when I did.

That's correct. The big downfall to this is another issue could arise and you wouldn't know it because the CEL is already on.

In PA, vehicles in excess of 9,000 pounds GVWR are not subject to emissions inspection.
Last spring, my RV passed its yearly safety inspection with an active check engine light.

This is true but if you are a registered repair shop there are serious consequences for doing so. It rises to a whole different level. Emission laws are Federal.

I plan to pre-emptively remove my cat and install a pipe. I do not want to be far away from home base and discover that my RV started to sound like it has a bad NASCAR exhaust system. And with questionable replacement parts availability.
Tell the thieves that it's a federal crime to remove emissions equipment....
