I thought about turning it down and then decided not to because I had called Entegra when I bought the unit and I was told it could handle 60 to 65 psi.

Long story short, 60 psi was too high. I had a leak behind the shower one evening.

The good news was no permanent damage. Once I lowered the psi back to 45, everything worked fine. Ever since that episode, I’ve kept my regulator at 45 psi.
There's a problem if your plumbing can't handle 60 psi. Backing down to 45 isn't the way to fix it. There's a good chance it'll show back up no matter what the pressure is. Hopefully you got in there and made the repair.

The easiest way to determine the MAX pressure is to look at the label on your on-board water pump. Whatever is printed there is your MAX.

Here's a photo of mine:

I know people personally that aren't happy with that low a pressure but it works fine for us. Are you sure there isn't a problem elsewhere? A blockage? Check valve? An aerator stopped up? Many RV shower heads have a water saver device in them which really slow the water down as well.
According to a quick google search, plastic PEX fittings are rated at 800-PSI. I suspect the weak link is poor joints with improper clamps/ crimps, and (maybe?) the (connections to) REINFORCED VINYL TUBING used in some places where more FLEX needed? Searching the tubing you can find as low as 75-PSI up to 200-PSI, and then there is WATER HAMMER EFFECTS that can/ do blow soldered copper joints apart. BUT I HAVE ALSO SEE THE WEAK LINK OF city water hose RUBBER WASHERS where several joints leaking/ spraying with NO regulator, and ZERO LEAKS with no other action than adding the regulator.

Is the water pressure adjustable with newer Class Cs?

Mines a 2006. Original Sure Flow water pump. I just thought the water pressure is what it is based on the water pump. I think it's 1.5 gallons/minute. Maybe psi is listed.

Happy with my water pressure, even while showering. Many years ago found opening shower faucet all the way then.mixing gave the best water pressure while showering. I don't need a water massage and it's plenty strong to wash long hair

Higher presure greater chance of leaking. I think my pump comes preset to about 50 psi. I set my city water to 50 psi.
