Bryce Canyon NP (although it looks like all the NPS places in Utah have jacked up their prices
) and Dead Horse Point SP are two don't miss places IMO.
Canyonlands is pretty cool in spots, too, and Horse Thief BLM CG on the way in to them, is a great no frills spot to spend the night, if you can find room. Great dark sky spot. Affordable.
Since you're in the area and the easiest access is via Kanab, UT, you might consider a short side trip to Grand Canyon North Rim. It's the path less traveled of the Canyons, but it's worth the trip in. I know it's not southern Utah, but I would do it again. It's not usually crowded, has a decent little campground, but the amenities are scarce due to it's "middle of nowhere" location. It does have the basics, food, water, shelter. Affordable. Check dates for closure. It is seasonal access.
