I love to cook/grill/bake.
Up til now, DH and I have been doing road trips in our Honda CR-V,
I make up stuff ahead for simple heat-n-serve meals for our
get-away days as well our first night out on the road.

After a long first day of travel, we don't want to sit in a restaurant,
and I surely DO NOT want to cook.

Once we do decide on a rig, I was thinking of buying a small
3 quart Crock Pot ... it's just the two of us, dontcha know.

Has anyone got smaller sized recipes to go with a smaller pot?

Bread Recipe

This is my go to french bread recipe and is so simple:
2 cups warm water
1 egg
1 tsp salt
1 TBS sugar
1/4 c. lite olive oil (or any canola or veg oil)
5 cups bread flour (can use all purpose but bread fl is better)
2 tsp instant yeast (use what you have or can get. If regular pack of yeast
proof in warm water above).

In a large bowl, add all wet ingredients including egg salt and sugar (after whisking) to dry ingredients. Stir with a heavy duty spatula until well Incorporated. Remove from bowl to a floured surface and knead for 7 to 10 minutes (not that big a deal) dusting with flour as needed. place back in bowl (same one as to not add a dish to wash) and coat with oil, flipping over to coat. Cover and let rise till doubled in a warm draft free location till doubled in size. Punch down and let rise again. After 2nd rise, divide as desired ( 2 large loafs or several small ones. On a floured surface, roll or hand flattened each segment to rectangle shape and roll up tightly, pinching the end seam along the entire length. Let rise for 30 to 40 minutes. Place on sheet pan in preheated 420 to 450 preheated oven (depends on the convection oven you have) and bake for 25 to 35 minutes rotating half way through. Cool on wire rack as long as you can stand it. Enjoy!

Some of the simple things that I like to do in my Crock-Pot in my camper while we're traveling and I have a 2 quart is to Simply make hot sausage sandwiches when we get there all you have to do is add tomato sauce chop up some onions green peppers or if you like you can use the red and yellow ones put it in the Crock-Pot put the Crock-Pot in the stainless steel sink, plug it in, yes I have a 400 watt inverter and it works fine truck down the road for 3 or 4 hours when you get parked dinner is ready by the way don't forget what a strong gum band some kind of over the lid so don't slide off yea ibdid that one. Also easy to make you can adjust the size really easy for one or two or just open a can of Dinty Moore let it heat on low when you get there you can always make noodles or rice easy-to-do.

3-2-1- Cake modifications

I can't find chocolate angel cake so when I use a chocolate cake mix I just add in some extra cocoa powder.
I have added blueberries to the white cake before microwaving...so good with ice cream. If you add fruit, it will take a little longer to cook. Also, instead of a mug, the onion soup bowl style works really well too. Cook two, and you can make a tiny layer cake.
Yup, I like my cake! Lol.
I'm curious if anyone has made this but used something other than water for the liquid. Soda, coffee, juice.... does it, would it work?
