Can you improve this potato salad.....?

This was on another forum without specific ingredient amounts: Red potatoes, mayo, cilantro and seeded jalapeno pepper.

So, I did 6 potatoes, 6 tbsp mayo, handful of chopped cilantro and one pepper, chopped. Tasted...and found wanting. Added S & P and 2 tbsp fresh lime juice. OK....but still not up to par.

Thought about real bacon for next batch. Any suggestions would be much appreciated

Frank's RedHot sauce, that s**t goes in everything!!

Seriously, if you're not familiar with it, it's NOT red hot, it's a little zesty, but even just one or two shakes in a big batch of something like 'tater salad makes a HUGE difference in taste.

It's also, IMHO, a mandatory ingredient in any soup or stew also.

I even put it in omelettes.

I just made my mother-in-laws potato salad recipe. Her old school recipe is this.... when potatoes are still hot right out of the boiling water you take about a 1/2 cup of dill pickle juice from the jar of dill pickles and soak the potatoes for about 15 min. Take a paper towel and soak up the juice otherwise the potato salad will be too soupy it gives the potato salad a nice dill flavor. I add mayo, chopped pickles, hard boil eggs onions (if you like, hubby doesn't like so I don't put onions it in )celery chopped fine, a pinch of dill and celery seed a pinch of garlic salt and wah lah instant yummy!!!
