Wife and I finished off the chili tonight. It did last the 2 of us for 3 meals. I think it actually got better reheating it for the 3rd time over the fire.

I bought a cookbook from Lone Star Dutch Oven Society, and I'm going to try this one on my next trip.
Rancher's Meat Pie
Cook Time: 45 min Total Time: 45 min Difficulty: Medium Servings: 12 Source: Texas Treasury Dutch Oven Cooking
INGREDIENTS
Filling
2 Ibs beef, (chuck) cut into % inch cubes
2 cups onions (2 large), chopped
6 potatoes, medium size, peeled, cubed
4 carrots, medium, peeled, quartered and cut into 1 Inch long pieces
2 jalapeños, minced
1/2 cup mushrooms, sliced, dried or fresh
2 - 10 oz cans Rotel® tomato-pepper sauce, drained
1 - 8 oz can tomato sauce
4 medium sized sweet green peppers, chopped
2 cups canned whole kernel com, drained
2 Tbsp chili powder
3 tsp salt
2 tsp pepper
Сrust: (a сumin-pеcan corn bread)
2 cups all-purpose flour
1 1/2 cups yellow com meal
4 Tbsp sugar
3 tsp cumin seed (*)
1/2 cup vegetable or olive oil
1 large red bell pepper, chopped() 1 1/3 cups chopped pecans ()
2 tsp baking powder
1/2 tsp salt
1/2 tsp cayenne pepper (*)
2 cups milk
2 large eggs
DIRECTIONS
Brown beef until no longer pink and onions are translucent in an oiled 12 inch pot.
Stir in potatoes, carrots, jalapeños, mushrooms, Rotel® tomato-pepper sauce, green peppers, com, chili powder, salt, and pepper.
Bring to a boil, lower heat, cover and simmer 15 minutes. Use 12 briquets under and 16 over.
Note: For quick prep., use 2 pkgs. ready mix cornbread mix, Mix
per package directions and add items with (*) above.
Mix dry ingredients in a large bowl. Whisk milk, oil, and egg in a small bowl to blend.
Add milk mixture to dry ingredients and stir just until evenly moistened.
Mix in red bell pepper and pecans.
Pour batter on top of meat mixture. Bake at 400°F (6 briquets under and 20 briquets on top) until top is a golden brown and tester inserted into center comes out clean, about 30 - 35 minutes.

Dutch oven cooking
It has been years since I did dutch oven cooking, but my favorite was bbq chicken. Choose an oven size to hold the chicken. Place chicken in oven, but don’t pile too deep. Sprinkle chili powder over chicken. Cover lid with coals and a bed under. Cook for about 1 hour or until chicken is about fall off bone.
Sounds simple and it is, but good.

We been camping with the same couple since the early 90's. We both had two kids the same age and who attended the same school. We went on a lot of trips together over the years and the kids always got a kick out of pineapple upside cake, made over the fire in a dutch oven. Haven't done it for years though.

Our camping partners moved away to AZ. She’s the one who bought me my first DO for my birthday 20+ years ago.
Blueberry dump cake for us. Made one just last month on the Big Bend trip.

This came out fairly well, but a little drier than I like a meat pie to be. I may try adding a small can of Spicy V-8 next time to add a bit more moisture. I made a half recipe and it was still huge. We’ll have three meals out of this.

I just purchased weber charcoal for first time on sale at ACE these are nice and large and burn hot for longer recipes . Pretty sure I seen kingsford long burn at Menards before as well. I have used lump coals before found them to be a pain unless you break them into more even manageable pieces.

I used our big 14" wide Lodge DO twice this past weekend - pizza the first night, and enchiladas the second.
I noticed afterwards my seasoning is not doing so well, and I'm seeing rust, so I brought the DO out of the RV and will re-season over the winter. The 14" doesn't get used as much, and spends most of the year in it's cloth case.
Another bit of news - the Lone Star Dutch Oven Society repaired their web page - it's been down for many months (maybe a year?). My favorite DO site - Lone Star Dutch Oven Society - Home - Lone Star Dutch Oven Society.

One of our favorite late night snacks sitting around the fire, usually some wobbly pops involved. Ratio works for 10 in what we have.
Ingredients
- 14 Raw Dinner Rolls, thawed but still cold
- ¼ cup butter, melted
- 2 cups grated cheddar cheese
- 8 or more pieces cooked bacon, broken into small pieces
Instructions
- Cut each roll in half.
- Melt butter and pour into a 12-inch Dutch oven.
- Roll cut rolls in butter until coated and arrange in Dutch oven.
- Sprinkle with cheese and bacon.
- Cover with lid and let rise until the dough doubles in size.
- Bake at 350°F 20-25 minutes.
- Dutch Oven Temperature Control using Briquettes: 350°F in a 12-inch Dutch oven, oven top 16, oven bottom 8.
