This is one of my favorite childhood dishes, I don't remember where my mom got the idea for it, but it was a couple decades ago and I just remember, I LOVED IT.
The best kind of pan for this is one of those big, deep sided skillets you can get with the lid that goes on top. Usually, they're called something like a "Jumbo Fryer", or at least the one I bought at Target was called that...
Beef Stir Fry (AKA Peppered Strip Steak)
Ingredients
1-2 tbsps shorting/oil
1 medium yellow onion, sliced
1 Green bell pepper, sliced & cleaned
4-6 oz can/bottle sliced mushrooms or fresh washed well
16oz pacakge broccoli (Whole, Frozen)
2-2 1/2 lbs round steak, cubed or sliced thin.
5 beef boullion cubes
5 cups hot water
5 tbsps coornstarch
2 tbsps soysauce
Directions
Heat shortening/oil over med. High heat until hot (about 1-2 minutes),
reduce heat to low-add sliced onions and saute for about 5-10 min or until lightly browned. Remove onions and set aside to add later.
Raise heat in skillet to med-high and add additional shortening. When skillet is hot add sliced/cubed beef and cook until browned, season with salt and pepper as beef cooks. Remove beef form skillet and set aside while preparing gravy.
Melt 5 tbsps margarine in skillet. Add 5 boullion cubes dissolved in 1 cup of boiling water and 4 cups of hot water. Bring to boil.
Slowly stir in cornstarch mixture (5tbsps of cornstarch disolved in 1/2 cup cold water) use finger to make sure cornstarch is completely dissolved. Continue stirring over heat and let boil about 2 minutes, it will thicken.
Add broccoli, mushrooms, onions, green peppers and beef to gravy.
Continue cooking all ingredients together for about 10 minutes or until broccoli is tender.
Add 2 tbsps soy sauce just before serving. Stir well.
Make rice while cooking stir fry, rice takes about 20-25 minutes.
