My wife and I are mainly weekend kampers, since we both still work. That being said, we always look forward to our weekend campouts to unwind from our work weeks. One of the ways I like to unwind is to fire up the blender in the afternoon and/or evenings with my homemade fresh strawberry margaritas.

Last memorial weekend, we were camping next to some folks that invited us over to their campsite, where they served us one of the most refreshing drinks I have ever tasted. They had no name for the drink, but gladly gave me the recipe. Even though I love my margaritas, these were a very nice change of pace, and oh so very simple to prepare. Since they had no name, I've named them "Summer Slushies". Here's the recipe:

One 12 oz. can of frozen OJ concentrate
One 12 oz. can of frozen lemonade concentrate
One 46 oz. can of Dole pineapple juice
2 or 3 cups of your favorite rum OR vodka

Mix the above ingredients together and freeze. Do NOT add any water. The alcohol will keep the mixture from freezing solid, and will allow you to scoop it out easily with an ice cream scooper.

Fill a glass halfway with the frozen ingredients, and add 7-Up the rest of the way. Stir and enjoy!

One of the best things about this cocktail is that you can prepare it well in advance, store it in your freezer and scoop it out as you need it, without spending a lot of time in your galley!

Can't drink Pineapple juice, so I substituted Peach Mango juice. OH MY WAS IT GOOD! I found a new drink. Very refreshing. Thanks for sharing.

Hi All,

Hey Allegro Happy, I like you idea also, so I will now add the words "or Peach Mango juice" after Pineapple juice in my copy. this cut and past stuff sure makes changes to stuff easy !!

Ok...as I sit her slurping on this concoction- let me tell you this should be in EVERY RV freezer before you ever leave the house!!

Oh that sounds so good but I have a question. How on earth do you guys find room in the freezer for 86 oz. of slushies?? I barely have room for food! Of course, I'm full timing in a 32 footer!

So I'll get the stuff next week and do it for the 4th!

That my friend is about the only problem with this recipe. My wife stores one batch at a time in large square tupperware bowl, and then we scoop it out as we need it. My current RV has a double door refer and it just barely fits in the freezer. If you have room in the refer below, I imagine you could break the batch up and put part of it in the refer, and then transfer it into the freezer when needed. Just a thought...

Even worse than not having room in the freezer in the rv is to be out of town for two weeks and not having a freezer at all!

Ok..I can survive ---but it is my way to let you guys know that I am out of town for a bit and can't get online as much as usual

Why don't they design one with more freezer space? You would think that was a no brainer!
I had to pass up an incredible meat sale two weeks ago that probably would have supplied me for the summer for $40.00, I could do with a smaller fridge-maybe in tradeout.
