Howdy Carlie and welcome to iRV2.

Here are 2 that come to mind. The favorite breakfast one folks around the site call zippy eggs. Is a egg omelet cooked in a zip lock bag.
Put your eggs in the bag and add your favorite omelet items to it close the bag and squeeze it to mix, open the bag a bit and get all the air out if there are a lot of you put your name on the bag and put it in boiling water for 15 min ( or untill the eggs are cooked, not runny).

The next one we use when on the road and we don't want to wash dishes at night. Is simply a Taco Salad. the differance is you use a .99 cent size chip bag of your favorite taco chip, I like doritos. everything is pre cooked and prepaired at home. You simply break up the chips in your bag and add you cheese, shreded lettuce, tomatos, sour cream, seasoned hamburger and anything else you like to your chip bag. we eat it out of the bags with plastic forks and have no dishes. Great for when we stop just for the night.

We also have the Co Pilots Cafe' here on iRV2 which has some great ones that could work for you.

Again welcome to iRV2 and have fun.

Do you have a dutch oven or a BBQ grill.
This past weekend we made Veggie Pizza on the grill.
Grilled Chicken and Burgers w/ Whole Wheat buns and fresh homegrown lettuce and tomatoes.
In a couple of weeks we are headed out again and plan on:
Pre cooked pulled pork reheated in the DO w/ Coleslaw and heated veggie
Pizza again with salad
Chicken Lasagna, Mexican corn bread, jicama salad
Pasta Primavara with turkey meatballs or chicken
Hot Dog Stew (Hot dogs, beans, green peppers, pineapple)
I always heat a veggie and have salad available but luckily we are pretty active when we camp so this is about as health as it gets.
