Was posting over at the general dicussion forum about BBQ and thought I would pass along my Red Beans & Rice recipe. If you like you can add meat, ham hocks or sausage as you desire.
Red Beans
1 pound small red beans (not kidney beans)
6 cups water
2 tablespoons white vinegar
1 tablespoon oil
1 tablespoon salt
1 teaspoon chopped garlic (more as you like)
1 teaspoon course ground pepper
1 large sliced onion
Combine all ingredients and cook in a pressure cooker for 1 hour. Follow your cookers instructions for cool down.
If you don't have a pressure cooker, soak the beans overnight in water. The next day add the remaining ingredients, bring to a boil then simmer on low heat for 4-6 hours until beans are tender.
I suggest the beans be served over white rice topped with sliced onion. Serve along with your favorite BBQ. Bon Appetite!

I make these in the slow cooker and add ceyenne pepper and chili powder along with a great Cajun sausage you can buy at most Winn-Dixie stores. Can also add celery if you have it on hand.
