Suggestions on a basic book for baking......

Hello:
Thanks to each and everyone that took the time to reply to my inquiring about defrosting a Dometic refrigerator.
For those that enjoy baking in an RV a question,please.........
Would you kindly suggest a basic to perhaps advance book on baking?
One must do something positive for the spirit .Many thanks,parigi.

Anything in particular you want to bake? Sweets, main dishes, side dishes?



First thing, you're probably well aware, but most RV ovens are completely worthless. You can try to improve them by various methods like putting a pizza stone between the burner and the cooking rack or lining the bottom of the oven with fire bricks, but I've found that the propane oven in pretty much every RV I've been in couldn't be fixed for any useful baking. If you have a convection microwave, some of those are OK. We use an electric toaster oven, currently sitting on top of the stove. (We use an induction burner for most cooking). A poor toaster oven does a much better job than any of the "standard" propane RV ovens, but a decent toaster oven comes close to a real oven.



I like the Southern Plate cookbook by Christy Jordan for main and side dishes like squash casserole. She also has a dessert cookbook, Sweetness. I have it, but haven't tried many of the recipes. Many (most) of her recipes are also available at http://southernplate.com. From the title, you can guess these are "Southern comfort" recipes and while they are VERY good, they aren't always the healthiest. Unfortunately, if you're looking for healthy, I can't help much.



There are several good recipe web sites like the one mentioned above and http://allrecipes.com. Many of the websites have videos or more detailed instructions in addition to the recipes. They also have the advantage of user reviews and feedback.

Baking

I like the Ultimate Southern Living Cookbook for a variety of baking (and other) recipes. It spans easy to difficult options.
